Method

  1. Prepare the baking field

Heat the oven to 220°C (425°F). Line enough rimmed baking sheets with parchment paper to hold the taquitos in one well-spaced layer. For the default 16-taquito batch, use two standard half-sheet pans with eight rolls on each; use additional sheets or bake in batches as the yield increases. Leave 2 to 3 cm (about 1 in) between the rolls so hot air can crisp the sides instead of steaming them.

  2. Build the black bean filling

Thick partly mashed black bean filling holding a mound on a spoon

Rinse 480 g of canned black beans in a colander and shake off as much water as possible. Transfer the beans to a wide bowl and mash about two-thirds, leaving some whole beans for texture. Grate 120 g of sharp cheddar cheese (milk) and set it beside the bowl. Trim and finely slice 30 g of scallions. Add 80 g of thick tomato salsa for filling, 30 ml of lime juice, 2 g of ground cumin, 2 g of smoked paprika, 1.5 g of garlic powder, and 1 g of black pepper to the beans. Stir until thick and cohesive, then fold in the grated cheese and sliced scallions. The mixture should hold a mound on a spoon without running.

  3. Warm the tortillas

Working in batches of 4 to 5, wrap 16 15 cm (6-inch) corn tortillas in a clean damp kitchen towel and microwave on high for 30 to 45 seconds, checking at 30 seconds. They should feel hot, flexible, and slightly steamy but not wet. Keep each warmed batch covered and remove one tortilla at a time; corn tortillas crack quickly as they cool. Repeat until all tortillas are pliable.

  4. Roll the taquitos

Eight pale unbaked taquitos from one of two sheets resting seam-side down on parchment

Portion about 2½ to 3 tablespoons (40 to 45 g) of filling for each warm tortilla. Working with one tortilla at a time, shape the filling into a narrow strip just below the center, leaving the side edges clear. Roll the near edge firmly over the filling, continue into a tight cylinder, and place it seam side down on the prepared sheet. Repeat while the remaining tortillas stay covered. If a tortilla begins to split, warm it again before rolling rather than forcing it.

  5. Bake to a crisp finish

Brush 22 ml of olive oil thinly over the tops and exposed sides of the taquitos. Bake for 16 to 20 minutes, rotating the sheets once when the top surfaces begin to color, until the tortillas are crisp, the seams stay closed, and the edges are evenly golden. Start checking at 16 minutes; darker pans may brown the bottoms sooner.

  6. Set the tournament bracket

Spoon 80 g of thick tomato salsa for serving into a small bowl and place it near the center of a wide platter. For the default batch, arrange the 16 hot taquitos as eight non-overlapping pairs that narrow toward the bowl: four opening-round pairs at the outer edges, two semifinal pairs closer in, one final pair near the center line, and one champion pair leading directly toward the salsa without touching it. For scaled yields, keep every taquito paired and preserve the same broad-to-narrow progression, using a larger platter or a second platter as needed. Serve immediately so the shells stay crisp and the filling remains warm.

Cook's noteThe filling should be thick enough to hold a spoon track before rolling. Watery salsa or beans that were not drained well can soften the tortillas and make the seams open.

Smart Substitutions

  • No corn tortillas? Use small flour tortillas. They roll more easily and bake a little softer; flour tortillas contain wheat.
  • No sharp cheddar? Use Monterey Jack, pepper Jack, or a plant-based shredded cheese that melts well.
  • Different beans? Use canned pinto beans and mash them to the same thick, partly chunky texture.
  • No smoked paprika? Use mild chili powder for a warmer chile flavor or sweet paprika for a gentler filling.

Tips and Variations

  • Choose a thick, spoonable salsa for the filling; a thin salsa can loosen the bean mixture.
  • Keep the tortilla stack covered between rolls, and rewarm a small batch whenever the edges stop bending easily.
  • Leave clear space between taquitos on the baking sheet so the sides crisp instead of staying soft.

What Went Wrong?

  • Tortillas crack while rolling Warm them until fully flexible and keep the stack under a damp towel. Work with one tortilla at a time.
  • Filling leaks from the ends Use less filling, keep it in a narrow strip, and leave both side edges clear before rolling.
  • Taquitos stay pale or soft Give them more space on the sheet, brush the oil evenly, and confirm the oven has reached 220°C (425°F).
  • Seams open in the oven Roll more firmly and place every seam directly against the baking sheet so the taquito’s weight holds it closed.

FAQ

Can I make the bracket with flour tortillas?Yes. Use small flour tortillas and keep the same paired arrangement. The shells will be softer and less corn-forward, and they contain wheat.
How do I keep baked taquitos from unrolling?Warm the tortillas until flexible, avoid overfilling, roll firmly, and bake every taquito seam side down.
