Toast the sesame seeds

Set a small dry skillet over medium-low heat. Add 60 g of black sesame seeds and shake the pan often for 3 to 4 minutes, until the seeds smell deeply nutty and a few begin to pop; do not let them smoke. Immediately transfer the seeds to a wide plate so the pan heat does not darken them further. Spread them out and cool for about 5 minutes, until no longer hot.

Tip the cooled seeds into a high-powered blender or small food processor and pulse until they resemble damp black sand. Drain off and discard any packing liquid from 340 g of soft silken tofu. Peel and finely grate 8 g of fresh ginger. Add the drained tofu, 30 g of white miso, 15 ml of reduced-sodium soy sauce, 20 ml of unseasoned rice vinegar, 10 ml of pure maple syrup, the grated ginger, 10 ml of toasted sesame oil for dip, and 30 ml of cold water. Blend for 60 to 90 seconds, stopping once to scrape the sides, until the dip is thick, glossy, and completely smooth. It should mound softly on a spoon; add extra water one teaspoon at a time only if the blades cannot circulate.

Break 36 g of plain brown rice cakes for crunch into coarse crumbs about 5 to 8 mm across. Toss the crumbs with 5 ml of toasted sesame oil for crunch until lightly coated, then spread them in an even layer across the base of a wide, shallow serving bowl. Spoon the black sesame dip over the crumbs, starting at the center and working outward. Spread gently until the crunch is fully hidden without pressing hard enough to pulverize it.
Prepare the dippers and reveal
Rinse 240 g of English cucumber and 15 g of scallions under running water, then dry them well. Cut the cucumber into sturdy spears. Break 72 g of plain brown rice cakes for serving into hand-sized pieces only if the cakes are too large for dipping. Thinly slice the scallions and scatter them over the dip. Set the cucumber and rice cakes around the bowl, then serve immediately; encourage each scoop to reach the bottom so the crisp layer comes up with the dip.
Smart Substitutions
- No silken tofu? Use medium silken tofu and blend in a little more cold water until the dip is smooth and spoonable.
- No brown rice cakes? Use plain rice crackers by weight, crushing the hidden portion into coarse pieces rather than fine crumbs.
- No maple syrup? Use agave nectar or light brown sugar, then taste and adjust the rice vinegar to keep the finish bright.
- No rice vinegar? Use cider vinegar mixed with an equal splash of water for a softer acidity.
Tips and Variations
- Stop toasting as soon as the sesame smells nutty; smoke or a sharp bitter aroma means the seeds have gone too far.
- Keep the rice-cake pieces coarse. Fine crumbs absorb the dip faster and lose the contrast that makes the first deep scoop memorable.
- Spread the dip with light strokes, then leave the surface slightly rippled so the scallions stay visible and the bowl looks inviting.
What Went Wrong?
- Dip is too thick to blend Add cold water one teaspoon at a time, scraping the sides between additions, until the blades circulate smoothly.
- Dip tastes bitter Balance it with a small extra drizzle of maple syrup and rice vinegar; severely scorched sesame should be replaced.
- Crunch disappears too quickly Use larger rice-cake pieces, coat them lightly with sesame oil, and assemble the hidden layer immediately before serving.
- Dip slides off the cucumber Pat the cucumber cut sides dry and blend the dip a little longer so it holds a soft mound.
