Prepare the topping route
Cut 200 g of English cucumber into short matchsticks. Slice 4 scallions thinly, keeping the pale and green parts together. Chop 30 g of roasted unsalted peanuts coarsely. Set the cucumber, scallions, peanuts, and 9 g of toasted sesame seeds in separate piles so each bowl can be finished in clear bands just before serving.
Cook the noodles and edamame
Bring a large pot of water to a rolling boil. Add 300 g of plain dried wheat noodles and cook according to the package directions until just tender. Add 160 g of shelled edamame early enough that its package-specified stovetop time finishes with the noodles; for a three-minute product, add it when 3 minutes remain. Begin checking the noodles at 5 minutes if the package gives a range. Cook the edamame until bright green, tender, and steaming hot throughout. Before draining, reserve 120 ml of reserved noodle cooking water. Drain everything, rinse under cool running water for about 10 seconds to remove loose starch, then shake the colander thoroughly so the sauce will not be diluted. Transfer half of the cooked edamame to a small bowl for topping and keep the other half with the noodles.

Mince 2 garlic cloves and grate 10 g of fresh ginger into a large heatproof mixing bowl. Reserve one-third of 45 ml of vegetarian chili crisp in a small bowl for finishing. Add the remaining chili crisp, 45 g of Chinese sesame paste, 45 ml of reduced-sodium soy sauce, 30 ml of Chinese black vinegar, 10 ml of toasted sesame oil, and 12 g of light brown sugar. Whisk until no dry sugar remains. Add 120 ml of reserved noodle cooking water in three additions, whisking after each one, until the sauce is glossy and falls from the whisk in a slow ribbon. It should taste slightly stronger than you want because the noodles and vegetables will soften the seasoning.
Coat and rank up the bowls

Add the well-drained 300 g of plain dried wheat noodles and the unreserved half of 160 g of shelled edamame to the sauce bowl. Toss for 90 seconds, lifting from the bottom, until every strand is coated and no sauce puddles remain. Divide among serving bowls. Arrange 200 g of English cucumber along the outer edge, add 4 scallions and the reserved cooked edamame through the middle, and finish the center with 30 g of roasted unsalted peanuts, 9 g of toasted sesame seeds, and the reserved chili crisp. Serve immediately and mix the topping bands through at the table.
