Toast the pita tiles
Heat the oven to 200°C (400°F). Split 180 g of whole-wheat pita bread into single layers, then cut the bread into sturdy 3 cm (1 1/4 in) squares. Spread the pieces in one layer on a baking sheet and bake for 8 to 10 minutes, turning once, until dry, crisp, and lightly browned at the edges. Begin checking at 8 minutes because thin pieces color quickly.

Add 90 g of tahini, 60 ml of fresh lemon juice, 2 garlic cloves, 3 g of fine sea salt, and 1 g of ground cumin to a food processor. Run the machine while streaming in 90 ml of cold water, then process for about 1 minute, scraping the bowl once, until the mixture turns pale, smooth, and slightly fluffy.

Drain and rinse 480 g of no-salt-added canned chickpeas, then pat them dry. Reserve a small handful for the topping and add the rest to the tahini mixture. Process for 3 to 4 minutes, stopping twice to scrape the bowl, until the hummus is very smooth and holds a soft ridge when lifted with a spoon. Check the texture at 3 minutes and continue if it still looks grainy.

Rinse and dry 300 g of English cucumber, 200 g of cherry tomatoes, and 15 g of fresh flat-leaf parsley. Cut about half of the cucumber into small cubes and the rest into thick dipping sticks. Halve the tomatoes, chop the parsley, and halve 60 g of pitted Kalamata olives. Pat the cut vegetables and olives dry so they do not blur the hummus channels.
Build the puzzle board

Spread the hummus in a shallow square platter in an even layer. With the back of a clean spoon, draw two horizontal and two vertical shallow channels to form nine soft-edged topping tiles without scraping down to the platter. Fill the top row with the reserved chickpeas, cucumber cubes, and tomato halves; fill the middle-left and middle-right tiles with parsley and olives. Fill the center and bottom-row tiles with 30 ml of extra-virgin olive oil, 1 g of sweet paprika, 2 g of ground sumac, and 9 g of toasted sesame seeds, keeping each topping mostly inside its own section. Arrange the pita tiles and cucumber sticks around the platter and serve immediately.
Smart Substitutions
- No whole-wheat pita? Use plain pita or sturdy flatbread crackers, choosing pieces broad enough to scoop without snapping.
- No sumac? Dust that tile with a little extra sweet paprika and finish it with a small squeeze of lemon just before serving.
- No Kalamata olives? Use another firm pitted olive or well-drained diced roasted red pepper.
- Want milder garlic? Use one garlic clove and adjust the finished hummus with a little more lemon juice to taste.
Tips and Variations
- Pat every topping dry before it touches the hummus; moisture is what makes the tile boundaries run together.
- Wipe the spoon between channels so the lines stay clean and the pale hummus does not drag across the topping zones.
- Keep the pita squares thick enough to scoop from the center without cracking or dropping crumbs over the board.
