Build the cheddar dough

Finely grate 170 g of vegetarian mature cheddar and cut 70 g of unsalted butter into small cubes. Add 150 g of all-purpose flour, 16 g of cornstarch, 2 g of ground mustard, 1.5 g of fine salt, and 0.5 g of black pepper to a food processor and pulse twice to combine. Add the grated cheese and butter, then pulse until the mixture resembles coarse orange crumbs. Add 15 ml of cold water gradually and pulse just until the dough clumps when pressed; stop before it turns greasy. Turn it out, press it into a flat disk, and wrap it.
Chill until pliable
Chill the wrapped dough for 20 minutes, until firm enough to portion but still pliable. If the edges become hard, let the disk stand for 2 to 3 minutes before shaping.

Heat the oven to 180°C (350°F). Line enough rimmed baking sheets with parchment to hold the rounds in one layer. Divide the dough into 6 equal pieces per serving; for the default 4 servings, each piece will be about 19 g. Roll each piece into a ball, flatten it to a 5 cm (2 in) round about 8 mm thick, and press a 2 cm (3/4 in) shallow well in the center with the back of a teaspoon. Keep the base intact and space the rounds 3 cm (1 1/4 in) apart.
Set the wells and add chutney

Bake the unfilled rounds for 8 minutes, until the tops look dry and the edges are set but not browned. Remove the sheets, gently press the wells again with the teaspoon, and divide 80 g of mango chutney among them, keeping each center just below the rim. Work carefully because the sheets are hot.

Return the sheets to the oven and bake for 8 to 10 minutes, checking at 8 minutes, until the edges are golden, the bottoms feel firm, and the chutney bubbles gently without spilling. Rotate the sheets only if the oven browns unevenly.

Let the crackers cool on the sheets for 10 minutes so the centers set and the edges crisp, then transfer them with a thin spatula and serve. They should lift cleanly without bending, and the chutney should stay inside the wells.

Smart Substitutions
- No mango chutney? Use the same amount of thick apple chutney or finely chopped tomato chutney.
- No vegetarian mature cheddar? Use vegetarian aged Gouda or vegetarian Red Leicester for a similarly firm, savory dough.
- No cornstarch? Replace it with the same weight of all-purpose flour; the crackers will be slightly less delicate.
- Want a sharper center? Choose a hot mango chutney instead of a mild one, keeping the quantity unchanged.
Tips and Variations
- Chop any large fruit pieces in the chutney before measuring so every well gets an even, contained spoonful.
- Use the rounded back of the same teaspoon for every well to keep the filling depth consistent.
- Rotate the baking sheets only when your oven browns unevenly; unnecessary movement can disturb the soft centers.
What Went Wrong?
- Dough cracks while shaping Let it stand for 2 to 3 minutes, then press the edges together. Add a few drops of cold water only if it still will not hold.
- Rounds spread too much The dough became too warm. Pause shaping and chill it briefly until the butter firms again.
- Wells close during the first bake Press them again as soon as the sheets come out, before adding the chutney.
- Chutney bubbles over Keep each spoonful below the dough rim and use a thick chutney with small fruit pieces.
