Build the lemon-herb dressing

Prepare two skewers for each serving selected. If using bamboo skewers, cover them with water for 20 minutes while you prep. Add the chicken and vegetables to the remaining dressing and toss with clean tongs until every surface is lightly coated. Assemble the skewer loadout
Thread the coated pieces onto the prepared skewers in repeating groups of chicken, red pepper, zucchini, and red onion. Begin checking at 10 minutes rather than relying on color alone. Transfer the cooked skewers to a clean platter and spoon half of the reserved lemon-herb dressing over them and serve the rest alongside in a small bowl.

- No outdoor grill? Cook the skewers under a preheated broiler on a foil-lined rimmed tray, turning often and checking the chicken for 74°C/165°F.
