Prepare the skewers and mushrooms
If using wooden skewers, soak enough for two skewers per serving in water for 20 minutes. While they soak, wipe 400 g of medium cremini mushrooms with a damp towel, trim the stem ends, and sort them so similarly sized caps cook together. Pat the surfaces dry before threading.

Whisk 60 ml of reduced-sodium soy sauce (contains soy and wheat), 60 ml of water, 36 g of dark brown sugar, 15 ml of unseasoned rice vinegar, 10 ml of toasted sesame oil (contains sesame), and 8 g of cornstarch in a small saucepan until no lumps remain. Grate 10 g of fresh ginger and mince 2 garlic cloves, then stir them in. Bring the mixture to a gentle simmer over medium heat, whisking often, and cook for 3 to 4 minutes until glossy and thick enough to coat the back of a spoon. Pour one-third into a clean bowl for the final brush and keep it separate from the cooking portion.

For each serving, lay two skewers parallel about 1.5 cm (1/2 in) apart. Push both skewers through five mushrooms from the cap side toward the stem side, leaving small gaps between mushrooms and about 6 cm (2 1/2 in) of handle clear. Repeat for the remaining servings. Brush 15 ml of neutral cooking oil over every exposed surface and season evenly with 1 g of black pepper.
Preheat the grill pan
Set a ridged grill pan or heavy skillet over medium-high heat for 3 minutes. It is ready when a drop of water flicked onto the dry surface sizzles and evaporates quickly. Turn on the exhaust fan or open a nearby window before adding the skewers.

Lay the paired skewers in a single uncrowded layer. Press them lightly against the pan with tongs for a few seconds, then cook undisturbed for 4 minutes. The lower surfaces should be deep golden brown and release without tearing; work in batches if the pan cannot hold them with space between portions.

Reduce the heat to medium. Brush the cooking portion of glaze over the mushrooms, turn the skewers, and brush the other side. Move the pan off the heat if the sugar darkens faster than the mushrooms can glaze.

Slice 4 scallions into thin rings. Transfer the hot paired skewers to a long platter, arrange them in a loose staggered curve, and brush with the reserved clean glaze. Scatter 4 scallions and 9 g of sesame seeds (contains sesame) over the mushrooms, keeping the handle ends clear, and serve immediately while the glaze is glossy and the edges are still crisp.
Smart Substitutions
- No cremini mushrooms? Use white button mushrooms of similar size, or cut portobello caps into thick pieces and secure each piece with both skewers.
- Need a wheat-free swap? Use an equal amount of reduced-sodium tamari and check the label for ingredients and sodium; the sauce will remain soy-based.
- No brown sugar? Use maple syrup in the same volume, then simmer the glaze a little longer if it needs more body.
- No grill pan? Use a heavy skillet, or broil the skewers 10 to 12 cm (4 to 5 in) from the heat, turning and glazing near the end.

What Went Wrong?
- Mushrooms spin while turning Check that both skewers pierce every mushroom and stay parallel; one loose puncture lets the cap rotate.
- Glaze burns before it sets Lower the heat, move the pan off the burner briefly, and continue with thinner coats during the final minutes.
- Mushrooms steam instead of brown Pat them dry, preheat the pan fully, and cook in batches with open space between the paired skewers.
- Glaze is too thin Return it to a gentle simmer and whisk for another minute until it leaves a clear trail across the back of a spoon.
