Prepare the melon signal
Wash your hands and clean the cutting surface. Scrub the whole honeydew under running water with a clean produce brush, dry it, then cut away the rind and seeds. Use a 2 cm (3/4 in) melon baller to make three neat spheres per drink for garnish. Cut the remaining flesh into chunks and measure 680 g of ripe honeydew melon total, counting the garnish balls as part of that amount. Blend the remaining melon chunks with 60 ml of fresh lime juice, 60 g of granulated sugar, and 1 g of fine sea salt until completely smooth. Pass the mixture through a fine-mesh sieve into a pitcher, pressing gently, and keep it nearby while the pearls cook.
Cook the pearls on cue
Bring a large saucepan of water to a rolling boil. Add 80 g of 5-minute quick-cooking tapioca pearls directly to the boiling water and stir for 30 seconds so none stick to the base. When the pearls rise, lower the heat to maintain a steady medium boil and cook for 5 minutes, stirring every minute. They should swell and look mostly translucent.

Take the saucepan off the heat, cover, and let the pearls stand for 5 minutes. Drain them into a fine-mesh sieve and rinse under cold running water, stirring gently, until cool and no longer slick with loose starch. Bite one pearl: it should be chewy and translucent through the center, with no chalky core. If the center is opaque, return the pearls to fresh boiling water for 2 minutes and repeat the covered rest. Transfer them to a bowl and fold in enough prepared melon base to lightly coat every pearl and keep them separate.

Divide the coated pearls evenly among the serving glasses. Add 420 g of ice cubes, then divide the strained melon base evenly among the glasses. Tilt each glass slightly and slowly pour in 720 ml of chilled plain sparkling water so the bubbles stay controlled. Stir once from the bottom upward with a wide straw or long spoon. Thread three reserved melon balls onto one plain reusable pick per drink and rest one pick across each rim. Serve as soon as the glasses are assembled.
Smart Substitutions
- No honeydew? Use ripe Galia melon or cantaloupe. The color will shift, but the fresh melon-and-lime balance still works.
- No quick-cooking pearls? Use regular tapioca pearls and follow the package timing until every center is translucent and chewy.
- Prefer a sharper finish? Replace half the lime juice with fresh lemon juice for a brighter, less floral citrus edge.
- Want less sweetness? Reduce the listed granulated sugar by about 40 percent and choose a very ripe, fragrant melon.
Tips and Variations
- Use a wide boba straw so the pearls travel easily without forcing a hard pull.
- Pour the sparkling water down the inside of a tilted glass to control foam and preserve more carbonation.
- Stir only once after assembly; repeated stirring knocks out bubbles and breaks the clean green gradient.
What Went Wrong?
- Pearls have a chalky center Return them to fresh boiling water for 2 minutes, cover off heat for another 5 minutes, then test again.
- Pearls clump after rinsing Stir them gently with enough melon base to coat their surfaces before dividing them among the glasses.
- Soda foams over Leave clear headspace, tilt the glass, and pour the sparkling water slowly down the inner wall.
- Melon flavor tastes weak Use riper honeydew, strain without adding water, and add a little more melon base before topping with sparkling water.
