Blend the dry ingredients
Whisk 260 g of all-purpose flour, 40 g of white rice flour, 4 g of ground cardamom, and 3 g of fine salt in a medium bowl until the cardamom is evenly dispersed and no pale streaks of rice flour remain. Break up any compacted spice with the whisk so the finished cookies do not have bitter pockets.
Cream the butter and sugar

Beat 200 g of unsalted butter with 100 g of caster sugar on medium-low speed for 2 minutes, scraping the bowl once, until smooth, pale, and creamy but not fluffy. Stop when the sugar is incorporated; extra aeration can make the cube faces puff and soften.

Chill the marked cubes for 30 minutes, until the cubes feel firm at the edges and the pip walls no longer soften when lightly nudged. Near the end of the chill, heat the oven to 160°C (325°F) with a rack in the center.

Bake the chilled cubes on the lined sheet for 12 minutes at 160°C (325°F). The surfaces should turn dry and matte while remaining pale. Rotate the baking sheet from front to back when the timer ends so the second half of the bake colors evenly.

Leave the cookies on the baking sheet for 10 minutes. Do not turn or lift them yet; the butter-rich crumb is fragile while hot, and this short rest lets the bases firm without darkening the tops.
