Add 600 g of freshly cooked short-grain white rice, the remaining scallions, and 10 ml of toasted sesame oil to a wide bowl. Fold until evenly mixed, then press and turn the rice several times with a sturdy spoon until a few grains break down and the mixture holds together when squeezed.
Build the mirrored sesame pair

Divide the rice mixture into two equal portions per serving. With damp hands, press each portion into a round patty about 7 cm (2¾ in) wide and 1.6 cm (⅝ in) thick. Press half of the patties lightly into 18 g of white sesame seeds on one face and half into 18 g of black sesame seeds on one face. Arrange them on the prepared sheet with space between each piece and let them stand for 10 minutes so the surfaces settle.

Brush the exposed sesame-coated faces with the remaining half of 30 ml of neutral cooking oil. Turn the patties so the sesame-coated faces sit against the parchment, then bake for 10 minutes. Mince 4 g of fresh ginger. Whisk 30 ml of reduced-sodium soy sauce, 22 ml of rice vinegar, 15 ml of pure maple syrup, and 4 g of fresh ginger in a small bowl until smooth. Soy sauce contains soy and commonly contains wheat, so choose an appropriate alternative when needed.
Set the first glaze layer

Brush half of the glaze in a thin layer over the exposed faces. Return the sheet to the oven for 2 minutes, just until the glaze looks tacky and glossy rather than wet.

Turn the patties, brush the remaining glaze over the second faces, and bake for 2 minutes more. Remove them when the glaze has set and the sesame smells toasted; do not wait for the maple sugars to darken heavily.

- No black sesame? Use all white sesame seeds; the patties will cook the same, but the black-and-white visual contrast will be lost. Keep the two-patty serving format.
